Could you please tell me how the Thies 3D Ultrasonic Tester would connect to the CR1000X, and if it works with half-duplex RS485 C7 and C8?

Try using SHORTCUT, you'll find many sensors that use the RS485 Modbus protocol. You'll get programming examples and electrical connections.
